About Edio
A recipe site that plans its menu around the calendar.
Edio Recipes started with a simple habit: every autumn, a list on the fridge with the dates of the festivals coming up and what we planned to cook for each one. Los Angeles is a city where Halloween, Día de Muertos, Diwali and Thanksgiving all land within a few weeks of each other, and many tables celebrate more than one.
So the site works the same way. Instead of an endless archive, we publish a focused menu each season, organized by the celebrations that are actually coming up and the produce that is actually at the market.
How we test recipes
Every recipe is cooked in a regular home kitchen with standard supermarket equipment, at least twice, before it goes on the site. We write down real timings, not optimistic ones, and we note the things that commonly go wrong: oil that is too hot for gulab jamun, caramel that is too hot for dipping apples, pie crusts that turn soggy.
When a dish belongs to a tradition, we follow how it is made by the families and bakeries who make it every year, and we say clearly when we have adapted something for a home kitchen, such as using milk powder instead of khoya.
